100 g butter (softened)
60 g sugar
2 eggs
25 g flour
10 g rum
100 ml maple syrup
Directions
- Preheat the oven:
- Preheat the oven to 180°C (350°F).
- Line a baking sheet with parchment paper.
- Prepare the apples:
- Use an apple corer to remove the core and seeds from each apple, ensuring you don't pierce through the base.
- Make the pecan cream:
- In a bowl, mix the sugar and softened butter until creamy.
- Add the ground pecans and stir well.
- Beat in the eggs one at a time until fully incorporated.
- Add the flour, then finish with the rum, mixing until smooth.
- Fill and bake the apples:
- Stuff the apple centers with the pecan cream mixture.
- Place the apples on the prepared baking sheet.
- Bake for 20 minutes, until the apples are tender and golden.
- Prepare the maple caramel:
- While the apples are baking, gently heat the maple syrup in a small saucepan.
- Let it reduce until it reaches a caramel-like consistency, being careful not to burn it.
- Plating:
- Let the apples cool slightly after baking.
- Drizzle with the warm maple caramel.
- For extra indulgence, serve with a scoop of vanilla ice cream.
