
120 g softened butter
30 g white sugar
30 g brown sugar
1 egg
240 g oatmeal
¼ tsp baking powder
90 g almond powder
90 g dark chocolate
90 g frozen raspberries
- Prepare the chocolate:
- Chop the chocolate into the desired size.
- Blend the oats:
- Blend half of the oats into a very fine powder.
- Prepare the dough:
- Whisk together the softened butter, white sugar, and brown sugar until creamy.
- Add the egg, then mix in the oat powder, almond powder, and baking powder.
- Add the remaining whole oats, chopped chocolate, and raspberries (roughly chopped if too large), then stir, but do not create a perfectly smooth dough.
- Chill the dough:
- Place the dough in the fridge for one hour.
- Form the cookies:
- After an hour, form dough balls of your desired size using an ice cream scoop or your hands.
- Baking:
- Place the dough balls on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 350°F (175°C) for 15 minutes.
