Ingredients

120 g softened butter

30 g white sugar

30 g brown sugar

1 egg

240 g oatmeal

¼ tsp baking powder

90 g almond powder

90 g dark chocolate

90 g frozen raspberries

Directions
  1. Prepare the chocolate:
    • Chop the chocolate into the desired size.
  2. Blend the oats:
    • Blend half of the oats into a very fine powder.
  3. Prepare the dough:
    • Whisk together the softened butter, white sugar, and brown sugar until creamy.
    • Add the egg, then mix in the oat powder, almond powder, and baking powder.
    • Add the remaining whole oats, chopped chocolate, and raspberries (roughly chopped if too large), then stir, but do not create a perfectly smooth dough.
  4. Chill the dough:
    • Place the dough in the fridge for one hour.
  5. Form the cookies:
    • After an hour, form dough balls of your desired size using an ice cream scoop or your hands.
  6. Baking:
    • Place the dough balls on a baking sheet lined with parchment paper.
    • Bake in a preheated oven at 350°F (175°C) for 15 minutes.
  7. Enjoy:
    • Let them cool or enjoy them warm!
